A crunchy, wholesome peanut bar made with just peanuts and jaggery (or sugar). Known as Kadalai Mittai / Kappalandi Mittai, this is a classic South Indian snack. Naturally high in protein and healthy fats, it’s one of the simplest traditional protein bars you can make at home, perfect for tea-time, kids’ snacks, or post-workout energy.

Ingredients

  • • Peanuts – 1 cup (roasted & skin removed)
  • • Jaggery – 3/4 cup (powdered) OR Sugar – 1 cup
  • • Water – 2–3 tablespoons
  • • Cardamom powder – 1/4 tsp (optional)
  • • Ghee – 1 tsp (for greasing)

Instructions

  1. Roast peanuts until golden, remove skins, and set aside.
  2. Grease a tray or plate with a little ghee.
  3. Heat jaggery (or sugar) with 2–3 tablespoons of water.
  4. Boil until it reaches one-string consistency (sticky but not watery).
  5. Add cardamom powder if using.
  6. Switch off the heat and immediately add the peanuts.
  7. Mix quickly to coat all peanuts evenly.
  8. Transfer the mixture onto the greased tray.
  9. Flatten using a rolling pin or the back of a greased spoon.
  10. Cut into bars while still warm.
  11. Let it cool and harden completely before storing.
